Orecchiette with Sausage and Cherry Tomatoes
serves 4
Ingredients
- 1 lb orecchiette pasta, cooked
- 1/4 C olive oil
- 3/4 lb sweet Italian sausage, casings removed, 1" chunks
- 1 pt cherry tomatoes
- 1 t dried oregano
- 1 t dried basil
- 1 t dried parsley
- 1/2 C white wine
- 1/2 C provolone, shredded
Instructions
- Sauté the sausage in oil, then remove from heat.
- Reduce the wine, herbs and tomatoes by 1/2. Season to taste.
- Return the sausage to the pan, add the pasta and provolone and toss.
- Plate and serve.
